wrap-up of some quick and easy meals we made over the last week!
tofu breakfast sandwich
press an extra-firm block of tofu for at least 30 minutes. slice into patties, about 1/4 inch thick each. fry them up with low-sodium soy sauce, garlic, rosemary, and salt & pepper until crispy-ish. slice up an apple sage field roast link into little medallions, and fry with the tofu until crispy. pile them on a sandwich, and eat. (field roast is one of those “buy once every few months” kind of foods.)
toss a few cups chickpeas in a pan with a small chopped onion and 1 cup chopped mushrooms. cook on medium heat with some soy sauce, salsa, sriracha, and chana masala spices. (sounds all over the place, but it works!) serve with rice or bread.
10-minute (raw!) tart
blend together 1 cup each walnuts and pecans. form them into a flat crust. blend together 2 avocados, 1/2 cup cocoa powder, 1/2 cup agave, a small handful brown sugar, and a little vanilla extract. (add sugar/cocoa to taste.) pour on top of crust and gently spoon it around. top with fresh berries. eat this as soon as possible, it won’t keep overnight because of the avocado.
in a sautee pan on medium heat, cook black beans, corn, and peppers in a mixture of salsa, nutritional yeast (at least 2 tbsp), onion powder, sriracha, salt, and pepper. the sauce will thicken up after about 10 minutes, which is an indicator that it’s done. serve piping hot with crusty bread.
linguine with cream sauce, veggies, and almond parmesan
use this recipe for the sauce, and be sure to include some broccoli, which really soaks up the sauce well. the ‘parmesan’ as always is just almonds crushed in a bag, with onion powder and salt added to taste.
Easy Vegan (or Not) Fudge
Adapted from Gluten Free Easily
This is truly delicious. You won’t want to stop after once piece. And it’s so easy to make. You won’t have to….
….maybe I shouldn’t post this….
3 1/2 cups powdered sugar
1/2 cup cocoa powder
1/2 cup vegan butter (or just regular), melted
1/4 tsp sea salt (the sea part is important)
1/4 cup vanilla soy milk (or milk or flavored soy milk or egg nog or whatever milk like substance you want to use)
1 tbsp vanilla extract
- Lightly grease an 8-inch square pan (or line with parchment paper). Set aside.
- Combine first three ingredients in a large glass or microwaveable bowl.
- Add melted butter and stir some. Add soy milk and stir again. Mixture will be kinda lumpy and hard to stir; that’s okay. Stir until ingredients are at least well incorporated.
- Microwave on HIGH uncovered for 1 minute, stir. Microwave for another minute, stir. Microwave for 30 seconds, stir.
- Remove from microwave and stir in vanilla extract.
- Spread into prepared pan.
- Place uncovered in freezer for 15 minutes.
- Cut into small squares with a sharp knife and serve.
Makes about 36 squares (1 ½-inch).

To make this “healthier” I would suggest swirling in almond butter or substituting some of the powdered sugar for protein powder, no guarantee that will work, but it’s a though.

This meal has more than enough flavor to go around. With curry, oranges, onion, and sesame seeds it packs a punch and is easy to make!

Adventurer Mark Moffett has found the world’s biggest insect - which is so huge it can eat carrots. The former park ranger discovered the giant weta up a tree and his real life Bugs Bunny has now been declared the largest ever found. He came across the cricket-like creature, which has a wing span of seven inches, after two days of searching on a tiny island. The creepy crawly is only found on Little Barrier Island, in New Zealand. The species was wiped off the mainland by rats accidentally introduced by Europeans.
Update on Patrick, the beautiful dog who was starved and thrown down a trash chute.
The person that starved Patrick to the brink of starvation and subsequently threw his body down a trash chute, has been found and charged.
Patrick continues to get stronger with each passing day. The dog has been treated by Garden State Veterinary Specialists and his progress is shared on their Facebook fan page, as well as on his own Facebook page, The Patrick Miracle.
